The amount of GB of SSD you need depends on your specific needs and use case. As a general rule of thumb, a 128GB or 256GB SSD can be sufficient for basic use like browsing the web and storing some documents. NVMe SSDs can achieve much faster read and write speeds than traditional SATA-based SSDs.
